this is what a typical carb-free dinner looks like. and by carb-free i mean no-rice-pasta-potato-or-bread-people.
i've come to the conclusion that if you're gonna eat rabbit food (aka salad) at least make it worthwhile and eat something with some nutrients. like spinach and broccoli. cucumber is basically water, but i like the effect as well as the crunch factor. i think there's some broken up cheddar cheese for some extra protein. olives...are a given. i can't seem to go a day without eating at least a spoonful. at least. you can catch me at the kitchen counter…with a big spoon, fishing 'em out. i'm not ashamed. my name is hayley, and i'm addicted to olives. usually there's some red peppers floating around too because they're ridiculously high in vitamin c (more than oranges), but i'm waiting for market day tomorrow morning to stock up.
if you have some mayo and english mustard then i suggest you try this scrumptious dinner some time. and, yes...it has to be english mustard. regular mustard is for wimps...it's true. why? because english mustard will burn the insides of your nose, that's why. you won't be disappointed. promise.
seriously though, this recipe is like…stupid easy. and, i can't take any credit because it was the photographer who introduced us. (that's not an insult because i'm pretty sure she’ll say the same thing) aha. throw in some oregano, parsley and basil herbs and mr. salt and mrs. pepper and you're good to go. i could eat this...hands down (i gotta stop saying, "hands down")...any day of the week. and the best thing? feeling full but not lethargic. mission accomplished people. welcome to the low-carb lifestyle. once your stomach shrinks...you’ll know exactly what i'm talking about.
let me know what you think. a glass of wine (red or white) couldn't hurt either. i had a south african shiraz. i'm not sayin', i'm just sayin' as the literary genius would say.
who would've thought. mayo and mustard. together. on chicken. hmmm.
